Therefore, this is not going to be an ordinary, movable, mob. With that out of the way, it *would* be possible to make the tentacles unmoving slaves ... or do some kind of "special" collision pattern (allowing attacks only through the diagonal) and conveniently ignore the ability of mages to do summons.
As an implementation detail, we might want to make the actual squid an NPC rather than a mob. But you don't need to care about that.
