No wild animal want to be ridden (not even horses). But any animal that's able to stand the weight of a human is suitable for riding if it can be trained, from camels to elephants. Moubos don't look like aggressive animals and they seem to be big and strong enough, it seems to me that they can be easily trainable.

I don't think that the neck is a problem.
Real giraffes have a much longer neck and that didn't stopped them from being once "the main means of transportation in many places in the world".

That would be a nice alternative, but then only spellcasters would be able to do so.
There's people who prefer the good old steel and who don't like magic. And I think that those knight-like people are the ones who would want the riding (for mages a nifty astral warp spell would be probably preferred for transport, although your idea could be a cool nature spell).
